Broccoli Salad

For Salad
400g broccoli, florets only, cut into equal size
½ cup shredded cheddar cheese
50g dried cranberries
30g veal bacon
20g baked sunflower seeds
20g red onion, diced
⅛ teaspoon salt

For Dressing
6g SIS Lite Sugar
⅜ cup mayonnaise
⅛ cup sour cream
1½ cups apple cider vinegar
⅛ teaspoon salt
⅛ teaspoon pepper

  1. Prepare the salad. In a saucepan of boiling water, add broccoli florets and salt for 1 minute. Remove from saucepan and transfer to a bowl combination of ice and water. Drain and place on a plate line with kitchen paper and let it to cool.
  2. Combine the broccoli, cheddar cheese, dried cranberries, veal bacon, sunflower seeds and onion in a large bowl.
  3. Prepare the dressing. Whisk mayonnaise, apple cider vinegar, sour cream, SIS Lite Sugar, salt and pepper until smooth and well combined.
  4. Pour the dressing over the broccoli combination, toss to coat.
  5. Chill in the fridge for at least 20 minutes before serving.
