Hot & Sour Cabbage Soup

500g cabbage, sliced
300g chicken breast, sliced
120g carrot, peeled and chopped
2 jalapeno peppers, seeded and diced
1 can diced tomato (410g)
4 cups low-sodium vegetable broth
1 yellow onion, diced
2 tablespoon olive oil
3 tablespoon apple cider vinegar
2 tablespoon SIS Brown Sugar
½ teaspoon salt
¼ teaspoon pepper

  1. In a frying pan, saute carrot, onion, jalapeno peppers and cabbage in a large stockpot with olive oil until they beginning to soften for 5 to 7 minutes.
  2. Add the diced tomato, salt, black pepper, SIS Brown Sugar, apple cider vinegar, vegetable broth and chicken breast. Stir to combine.
  3. Simmer soup over medium heat, stirring occasionally, until cabbages are softened.
